Seoul has one genuine must-do day trip — the DMZ, because the border cannot be seen any other way — and several good ones. Suwon's fortress is the cheapest and easiest at a metro fare. Nami Island and the rail park fill an autumn day. Everland is a full day for families. Busan is not a day trip, whatever the train timetable suggests.

The DMZ is the only one that cannot be done independently. Everything else on this list is reachable on public transport, and for Suwon that means an ordinary transport-card fare.
Which One, Depending on the Day
If you have one spare day and want the thing you cannot get anywhere else: the DMZ. It is the only border of its kind, the access rules make it impossible to improvise, and it stays with people. Read the War Memorial page first — the two belong together.
If you want a cheap, easy, self-directed day: Suwon. Metro there, walk a UNESCO fortress wall for free, eat galbi, metro back. Nothing to book and nothing to spend beyond a palace ticket if you want one.
If it is late October: Nami Island with the rail bikes, which is the autumn day the whole country does.
If you are travelling with children: Everland for the full theme-park day, or Lotte World if you would rather not lose two hours to the coach.
If you have a week in Korea: two nights in Busan rather than a day trip, with the KTX between them.
Counting the Travel Honestly
The advertised journey time is rarely the real one. A tour that says 'one hour to the DMZ' means an hour of driving after a 07:30 pick-up that requires leaving your accommodation at 07:00, and the return drops you in the centre at four or five in the afternoon.
For independent trips, add the metro journey to the departure station at both ends. Suwon is 'an hour from Seoul' from Seoul Station; from Hongdae it is closer to ninety minutes.
The practical test is what remains. A day trip that leaves you six usable hours at the destination is a day trip; one that leaves three is a bus tour with a view. By that measure Suwon, Nami, Everland and the DMZ all work, and Busan does not.
And there is an opportunity cost. Seoul has more than three days of material in it, and a visitor with three days who spends one of them on a coach sees less of Korea rather than more.
